Since bursting onto the scene in London in 2012, COYA has led the way in innovative dining experiences. At the heart of COYA is its Peruvian kitchen. Led by renowned Chef Sanjay Dwivedi, the kitchen maintains traditional elements of Peruvian cooking whilst blending influences from Japanese and Chinese cuisines to create mouth-watering dishes.
